Discover how to make the most of the fresh and bountiful produce found at your local farmers’ market in this cooking class inspired by cookbook author Deborah Madison. Learn how to make a basic vegetable stock, properly cook rice, and techniques for simmering and braising. Students will sample dishes including celery root and wild rice chowder, robust end-of-season spaghetti, and apple tart with cinnamon custard.
