Copper Fennel

Smokey bronze finely dissected leaves are ornamental throughout the growing season on this culinary herb with the flavor of anise. Large flat umbels of small yellow flowers appear in July and August and are attractive to a number of pollinator insects. All parts of the plant are edible (the swollen bulb cooked, the leaves and stems as additives to casseroles, and the flowers as flavorings). This is a short lived perennial that should be planted in a sunny location.
